For over 3000 years and probably more that wine has been deliberately made, it has been a slow evolutionary process to make the substance better and better for the drinker. Wine isn't a natural product. It is made. And winemaking is ideally an artful series of interventions. That is why it is called winemaking. The use of technology, fining & filtration when executed judiciously to improve the interaction the drinker has with the liquid are totally in accordance with our philosophy. However, it is always pleasing when you achieve a wonderful result with less input as opposed to more. And with our wine this most often the case.
